  1. Prepare the Batter:
    • In a mixing bowl, combine rava, curd, and water.
    • Mix well to form a thick batter and let it rest for 10–15 minutes.
  2. Tempering:
    • Heat 1 tsp oil in a small pan.
    • Add mustard seeds, curry leaves, and chopped green chilies. Let them crackle.
    • Add this tempering to the batter.
  3. Add Veggies:
    • Mix in chopped onions, carrots, and salt. You can also add chopped coriander or grated coconut.
  4. Activate the Batter:
    • Just before cooking, add ¼ tsp Eno (or baking soda) and mix gently. The batter will become fluffy.
  5. Cook Aapay:
    • Heat the appe pan and grease each cavity with a drop of oil.

    • Cover and cook on low flame for 3–4 minutes.
    • Flip and cook the other side till golden and crisp.
